Smoked Salmon Brioche French Toast
This French toast is a quick, delicious brunch option and especially perfect for a chill weekend brunch. Fluffy brioche bread turns into golden French toast, spread with a dollop of lemony mayonnaise, topped with rocket, smoky salmon, sliced avocado and a sprinkle of capers. So simple and scrumptious!

Ingredients
- 2 free-range or organic eggs
- 120mL milk of choice
- Sea salt & freshly ground black pepper
- 30g parmesan, finely grated
- 4 slices sourdough brioche, cut 2cm thick
- 30g butter, for frying
- ½ cup whole egg mayonnaise
- 1 clove garlic, minced
- ½ lemon, juice
- 1 tsp honey
- Sea salt & freshly ground black pepper, to taste
- 100g smoked salmon
- 30g rocket
- 2 tbsp capers
- 1 avocado, sliced
Method
- Add eggs, milk, seasoning and parmesan in a shallow dish and whisk well to combine.
- Add two slices of brioche to the dish and allow to soak for 2-3 mins on each side.
- While the brioche is soaking, heat a frying pan over medium heat.
- Add the butter to the frying pan to melt and heat gently.
- After soaking, lift the brioche out of the dish, allowing any excess egg mixture to drain away, then put the brioche in the heated pan. Cook for approx. 2 mins on each side or until the brioche is golden.
- Repeat with the remaining slices of brioche.
- Make the Lemony Mayo by mixing all ingredients together in a small bowl.
- On each plate, place a piece of the French toast and spread some lemony mayo over. Divide the smoked salmon, rocket, capers and avocado between the four slices of toast.
