Smoked Salmon Brioche French Toast

Smoked Salmon Brioche French Toast

This French toast is a quick, delicious brunch option and especially perfect for a chill weekend brunch. Fluffy brioche bread turns into golden French toast, spread with a dollop of lemony mayonnaise, topped with rocket, smoky salmon, sliced avocado and a sprinkle of capers. So simple and scrumptious!

Ingredients

  • 2 free-range or organic eggs
  • 120mL milk of choice
  • Sea salt & freshly ground black pepper
  • 30g parmesan, finely grated
  • 4 slices sourdough brioche, cut 2cm thick
  • 30g butter, for frying
  • ½ cup whole egg mayonnaise
  • 1 clove garlic, minced
  • ½ lemon, juice
  • 1 tsp honey
  • Sea salt & freshly ground black pepper, to taste
  • 100g smoked salmon
  • 30g rocket
  • 2 tbsp capers
  • 1 avocado, sliced

Method


  • Add eggs, milk, seasoning and parmesan in a shallow dish and whisk well to combine.
  • Add two slices of brioche to the dish and allow to soak for 2-3 mins on each side.
  • While the brioche is soaking, heat a frying pan over medium heat.
  • Add the butter to the frying pan to melt and heat gently.
  • After soaking, lift the brioche out of the dish, allowing any excess egg mixture to drain away, then put the brioche in the heated pan. Cook for approx. 2 mins on each side or until the brioche is golden.
  • Repeat with the remaining slices of brioche.
  • Make the Lemony Mayo by mixing all ingredients together in a small bowl.
  • On each plate, place a piece of the French toast and spread some lemony mayo over. Divide the smoked salmon, rocket, capers and avocado between the four slices of toast.
