Ingredients
- 1 cup pine nuts, toasted (reserve 1 tbsp to stir though finished pesto)
- 250g good-quality parmesan
- 2 garlic cloves
- 4 cups rocket
- ½ cup olive oil
- Salt & pepper to taste
Method
- Place all ingredients in a blender and blend until smooth.
- Add the tablespoon of whole pine nuts and fold through with spoon.
- Transfer to a glass container, cover with a little extra olive oil and store in fridge.
