Slow-cooked, tender beef brisket paired with a tomatoey, spiced mixture creates a perfect filling for tortillas topped with fresh tomato, avocado and coriander.

Ingredients

  • Spiced beef cooked as per Sticky Brisket Burger recipe
  • 8 tortillas
  • 250g cheddar cheese, grated
  • 1 avocado, diced
  • 8 cherry tomatoes, halved
  • 1⁄2 bunch fresh coriander leaves, finely chopped
  • Sea salt & freshly ground black pepper, to taste
  • 1 lime, sliced into 8 wedges

Method


  • Heat the spiced beef in a small pot if you stored the meat.
  • Heat a sandwich press or pan.
  • Divide the heated beef between 4 tortillas. Top with the grated cheese, place a tortilla on top and grill 1 at a time.
  • Combine the avocado, tomato and coriander in a bowl and season to taste.
  • Cut the quesadilla into quarters and serve with the avocado tomato mix and fresh lime to squeeze over.
