Broccoli Rabe & Shitake Stir Fry With Poached Eggs

I always start the day with a few serves of vegies because I just find it sets me up for a much more productive day and I’m more likely to continue with eating well when I include them. This is one of my favourite combinations with immune-boosting shiitake mushrooms and broccoli rabe … breakfast of champions.

Ingredients

Method

  • 8 free-range eggs
  • 1 tbsp vinegar
  • 2 tbsp olive oil
  • 1 bunch broccoli rabe
  • 250g shiitake mushrooms
  • 2 cloves garlic
  • 2 tbsp tamari
  • 4 tbsp kimchi (optional)
  1. In large saucepan bring water to fast simmer. Add vinegar then break eggs in carefully one at a time and poach to your liking.
  2. In wok or saucepan, stir-fry broccoli rabe, mushrooms and garlic. If they stick, add a splash of water to keep them cooking. As vegetables soften, add tamari and stir well.
  3. Remove from heat and divide between four bowls. Top with poached eggs and kimchi and serve immediately.
