Ingredients

  • 2 boxes Explore Cuisine Red Lentil Rigatoni
  • 2 cups cashews, soaked in water for 2 hours
  • 3 cloves garlic
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 chopped dried chilli peppers
  • 2 vegan sausages, sliced, or sliced zucchini
  • Jar store-bought marinara sauce Olive oil
  • 2 bags vegan mozzarella
  • 1 bag vegan parmesan
  • Fresh chopped basil
  • Crushed red pepper

Method


  • Cook Explore Cuisine Red Lentil Rigatoni according to package directions.
  • Preheat the oven to 200°C.
  • Add soaked cashews, garlic, salt, pepper and chopped chillies to a food processor.
  • Add vegan sausage to a pan to brown.
  • Mix the cooked pasta, olive oil and vegan cheese in a bowl.
  • Add oil and sauce of choice to the bottom of a cake pan and begin to assemble rigatoni standing upright.
  • Pour on the cream sauce, marinara, more cheese and sausage.
  • Place in oven for 30 mins.
  • Release from the cake pan, cut, serve and enjoy!
