No-Sugar Apple & Cinnamon Teacake
This apple and cinnamon teacake is an oldie but a goodie. It’s super easy to make and uses coconut sugar rather than refined sugar. To make this vegan, swap the egg for a flax egg, use a vegan butter and a plant-based milk.

Ingredients
- 70g unsalted butter, softened
 - ½ cup coconut sugar
 - 1 egg
 - 1 tsp vanilla essence
 - ½ tsp ground cinnamon
 - ¼ tsp nutmeg
 - 1 cup self-raising flour
 - 1/3 cup milk or plant-based milk
 - 1 apple, thinly sliced
 - Extra butter & cinnamon, to top (optional)
 - Cream or ice cream, to serve (optional)
 
Method
- Preheat oven to 180°C. Grease and line a 20cm cake pan.
 - Beat the butter, coconut sugar, egg, vanilla, cinnamon and nutmeg until combined then continue beating on low and gradually add the flour and milk interchangeably.
 - Spoon the mixture into the pan. Arrange the apple slices on top, slightly overlapping.
 - Bake for 30 mins until cooked through. Leave to cool slightly before turning onto a wire rack.
 - Brush with extra butter and sprinkle with cinnamon and sugar if desired and serve while warm with cream or ice cream.
