No-Sugar Apple & Cinnamon Teacake

This apple and cinnamon teacake is an oldie but a goodie. It’s super easy to make and uses coconut sugar rather than refined sugar. To make this vegan, swap the egg for a flax egg, use a vegan butter and a plant-based milk.

Ingredients

  • 70g unsalted butter, softened
  • ½ cup coconut sugar
  • 1 egg
  • 1 tsp vanilla essence
  • ½ tsp ground cinnamon
  • ¼ tsp nutmeg
  • 1 cup self-raising flour
  • 1/3 cup milk or plant-based milk
  • 1 apple, thinly sliced
  • Extra butter & cinnamon, to top (optional)
  • Cream or ice cream, to serve (optional)

Method


  • Preheat oven to 180°C. Grease and line a 20cm cake pan.
  • Beat the butter, coconut sugar, egg, vanilla, cinnamon and nutmeg until combined then continue beating on low and gradually add the flour and milk interchangeably.
  • Spoon the mixture into the pan. Arrange the apple slices on top, slightly overlapping.
  • Bake for 30 mins until cooked through. Leave to cool slightly before turning onto a wire rack.
  • Brush with extra butter and sprinkle with cinnamon and sugar if desired and serve while warm with cream or ice cream.
