Roasted Sweet Potato Chips with Beans and Feta Recipe

Sometimes you just need something simple and easy to make but delicious to end the day with. This little combination is a breeze to make and provides a fibre- and antioxidant-rich hit. Enjoy this Roasted Sweet Potato Chips with Beans and Feta Recipe.

Serves: 1–2

Ingredients

Method

  • 1 small-medium sweet potato, cut into wedges
  • Oil
  • Sea salt
  • Handful green beans
  • 2–3 tbsp crumbled feta
  1. Place wedges on lined baking tray, drizzle with a little oil and a sprinkle of sea salt and bake at 200°C for 20 mins, or until cooked through and starting to caramelise on the outside.
  2. Transfer to serving bowl or cup with beans and feta.
