Spicy Mexican Breakfast Wraps

This spicy wrap uses its own homemade seasoning, but you can use store-bought taco seasoning if you prefer. It’s a really quick and easy lunch recipe for when you’re time-restricted.

Ingredients

  • Taco Seasoning (Makes: ¼ cup)
  • 1 tbsp chilli powder
  • Small pinch cayenne pepper
  • 1 tsp oregano
  • 2 tsp smoked paprika
  • 1 tbsp cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Pinch salt & pepper

    Wrap Filling
  • 1½ cups shredded cooked chicken
  • 1 tbsp taco seasoning
  • 4 gluten-free wraps, warmed in oven
  • Small avocado, mashed
  • Juice 1 lemon
  • 1½ cups shredded cos lettuce
  • 2 large tomatoes, coarsely chopped
  • 1/3 cup grated cheese
  • 2 limes, cut into wedges
  • Juice 1 lime
  • Fresh coriander, leaves picked, to serve

Method


  • Place all seasoning ingredients in an airtight jar and shake to combine.
  • Place the chicken and taco seasoning into a bowl and toss to combine.
  • In a small bowl, combine the mashed avocado and lemon juice.
  • Spread the tortillas with mashed avocado and top with lettuce, tomatoes, chicken and cheese. Add the coriander leaves and a squeeze of lime.
  • Roll up carefully, cut in the middle on a diagonal and serve on a plate with lime wedges and extra coriander.
