The perfect quick and tasty summer pasta salad. This is a light filling dish made up of fava bean pasta and topped off with vegan scallops

Ingredients

  • 1 box Explore Cuisine Fava Bean Fusilli
  • 10 large king oyster mushrooms
  • Vegan butter
  • 1 bunch sage leaves
  • 1 garlic clove, chopped
  • 1 cup fresh cooked peas
  • Zest ½ lemon

Method


  • Cook 250g Fava Bean Fusilli per package instructions.
  • Make vegan plant-based “scallops” from king oyster mushrooms by slicing stems into 1-inch pieces. Score one side in a crisscross pattern. Cook in vegan butter until golden on both sides. Remove to serve later.
  • Add sage leaves to vegan butter and cook until crispy, then remove leaves. Add garlic clove, pasta, a large handful of fresh cooked peas and zest. Once warmed through, serve topped with vegan scallops and extra sage leaves.
