San Choy Bow

San Choy Bow is such a fast and delicious meal to make for the whole family. Serve it warm or cold, in these easy lettuce cups, for a family on the move.

Ingredients

  • 1 tbsp oil
  • 2 tsp minced garlic
  • 2 tsp minced ginger
  • 500g pork, chicken or turkey mince
  • 1 tbsp kecap manis (sweet soy sauce)
  • 2 tsp soy sauce
  • 1 tsp sesame oil
  • 100g vermicelli noodles
  • 1 cup bean sprouts
  • 1 carrot, grated
  • ¼ cup fresh coriander leaves, chopped
  • 2 green spring onions, thinly sliced
  • Cos lettuce leaves, to serve

Method


  • Heat the oil in a pan and cook the garlic and ginger quickly for 1-2 mins.
  • Add the mince and cook until browned.
  • Add the kecap manis, soy sauce and sesame oil and cook on medium-high heat for about 5 mins until it is deep brown and caramelised.
  • Prepare the vermicelli noodles according to packet instructions.
  • Add the bean sprouts, grated carrot, coriander and spring onions and cook for 1 more min until just cooked tender.
  • Toss through the noodles and serve in lettuce cups.
  • Note: This is also delicious served in a wrap.
