Beef Quesadilla
Slow-cooked, tender beef brisket paired with a tomatoey, spiced mixture creates a perfect filling for tortillas topped with fresh tomato, avocado and coriander.

Ingredients
- Spiced beef cooked as per Sticky Brisket Burger recipe
- 8 tortillas
- 250g cheddar cheese, grated
- 1 avocado, diced
- 8 cherry tomatoes, halved
- 1⁄2 bunch fresh coriander leaves, finely chopped
- Sea salt & freshly ground black pepper, to taste
- 1 lime, sliced into 8 wedges
Method
- Heat the spiced beef in a small pot if you stored the meat.
- Heat a sandwich press or pan.
- Divide the heated beef between 4 tortillas. Top with the grated cheese, place a tortilla on top and grill 1 at a time.
- Combine the avocado, tomato and coriander in a bowl and season to taste.
- Cut the quesadilla into quarters and serve with the avocado tomato mix and fresh lime to squeeze over.
