Chocolate Avocado Mousse
This dessert is so delicious you will not believe it is healthy. Make sure to use ripe avocados and blend them well to ensure the mousse has a silky-smooth consistency. This recipe is features in Eat Well Magazine 61

Ingredients
- 2 large ripe avocados, peeled & stoned
- ¼ cup raw cacao powder
- 2 tsp vanilla bean paste
- 3 tbsp raw honey or maple syrup
- 1⁄3 cup coconut cream
- 150g dark chocolate, melted & cooled
- Grated dark chocolate & fruit, to serve
Method
- Place avocados, cacao powder, vanilla, honey and coconut cream in a food processor or blender and blend until smooth.
- Add melted dark chocolate and blend for 10 secs or until just combined
- Spoon mousse into dessert glasses and place them in fridge before serving. Serve with extra grated dark chocolate to garnish and extra fruit if desired.
