Fried Date Bowl
Sweet, salty, creamy and crunchy, this fried date bowl is a beautifully balanced dish that provides feel-good nourishment while still satisfying your sweet tooth.

Ingredients
- 2 tbsp extra-virgin olive oil
- 4-6 Medjool dates, pitted
- ¼ cup walnuts, roughly chopped
- 3 sprigs thyme
- 200g Brancourts 97% Fat Free Cottage Cheese
- Flaky sea salt
Method
- Heat 1 tbsp of olive oil in a small frying pan over medium heat.
- Add the pitted dates and cook for 2–3 mins, turning occasionally, until the dates begin to caramelise and blister.
- Toss in the walnuts and thyme sprigs and cook for another 1–2 mins, stirring gently to toast the nuts and infuse the oil with thyme.
- Spoon the cottage cheese into a serving bowl, spreading it out slightly.
- Top with the warm fried dates, walnuts and thyme. Drizzle the remaining 1 tbsp of olive oil. Finish with a sprinkle of flaky sea salt to taste.
