Gluten Free Coconut Dubai Chocolate Balls
Gluten-free coconut Dubai chocolate balls with pistachios and dark chocolate — a decadent treat packed with protein and antioxidants.

Ingredients
- 1¼ cups shelled raw pistachios & extra for topping
- 2 tbsp cold-pressed coconut oil
- ½ cup coconut cream
- ½ tsp pure vanilla extract
- ¼ cup & 1 tbsp pure maple syrup
- 3 cups shredded toasted coconut
- 200g good-quality dark chocolate
Method
- Line a baking tray with baking paper.
- Place pistachios in a small saucepan, cover with water and bring to a boil. Simmer for 3 mins, then drain. Spread the pistachios on a clean tea towel and rub to remove the skins.
- Add the peeled pistachios, coconut oil, coconut cream, vanilla and maple syrup to a food processor and blend until smooth and creamy. Transfer the mixture to a bowl and stir in the shredded coconut.
- Roll the mixture into tablespoon-sized balls and place them on the tray. Chill in the fridge for 20 mins to firm up.
- Melt the chocolate using a double boiler or heatproof bowl over simmering water. Dip each ball into the melted chocolate to coat, then return to the tray.
- Sprinkle with chopped pistachios and refrigerate until set, then enjoy.
