I know you’re going to find this hard to believe, but that crunchy, crispy coating on our friend The Colonel’s chicken can be made just as easily at home — without deep-frying! Try it and you’ll never look back.

Ingredients

  • 2 large chicken breasts, thin ends trimmed
  • Mayonnaise
  • 600mL buttermilk
  • 450g plain flour
  • 3 tbsp mixed herbs
  • 1 tsp celery salt
  • 1 tsp pepper
  • 1 tbsp smoked paprika
  • 1 tbsp onion powder
  • 1 tbsp salt
  • 3 tbsp garlic powder
  • Olive oil spray
  • 4 brioche buns

Method


  • Using a sharp knife, cut the chicken breasts horizontally to make 4 breast burgers.
  • Place the chicken in a bowl with the buttermilk.
  • Cover and marinate for 4 hours or overnight.
  • In a large plastic bag, mix the flour and seasonings together.

  • Using tongs, remove a chicken breast piece from the buttermilk and drain for a few secs.
  • Place it in the seasoning bag and shake to coat.
  • Place it back in the buttermilk and into the seasoned coating once more. Place chicken onto the baking tray.
  • Repeat process until all 4 pieces are coated.
  • Spray the chicken with olive oil spray and bake for 40 mins. Halfway through, turn and spray again.
