Ingredients

  • 1 cup pine nuts, toasted (reserve 1 tbsp to stir though finished pesto)
  • 250g good-quality parmesan
  • 2 garlic cloves
  • 4 cups rocket
  • ½ cup olive oil
  • Salt & pepper to taste

Method


  • Place all ingredients in a blender and blend until smooth.
  • Add the tablespoon of whole pine nuts and fold through with spoon.
  • Transfer to a glass container, cover with a little extra olive oil and store in fridge.
