Raw Carrot Noodle Salad with Pesto Dressing Recipe
Raw pastas made using a spiraliser can be so adaptable and, when topped with a sensational sauce, make fun raw dinners for everyone.

Ingredients
- Pesto Dressing
 - 1 cup basil leaves
 - ½ cup parsley
 - 2 cloves garlic
 - 2 tbsp nutritional yeast
 - ¼ cup cashew nuts
 - Juice ½ lemon
 - ½ avocado
 - Salt, to taste
 -  
 - 1 carrot, spiralised or peeled into noodles
 - ¼ head broccoli, divided into florets
 - 2 Lebanese cucumbers, diced
 - 1 celery stick, diced
 - 1 red capsicum, diced
 - ½ avocado, chopped
 - 1 cup sun-dried tomatoes
 - Few basil leaves, to serve
 
Method
- To make pesto dressing, place all ingredients in blender and blend.
 - Place carrot spirals, broccoli, cucumber, celery, capsicum, avocado and sun-dried tomatoes in bowl.
 - Toss salad, drizzle over pesto and top with basil leaves and serve.
