Beef Peanut Lettuce Cups
These beef peanut lettuce cups are one of the quickest and easiest meals and prep to plate in just 30 minutes. The lettuce cups are filled with tasty mince and veggies in a sweet soy sauce. Arrange buffet-style and your family can enjoy this simple mid-week meal!

Ingredients
- 1 tbsp extra-virgin olive oil
- 1 red onion, finely diced
- 3 cloves garlic, minced
- 1 tbsp ginger root, finely grated
- 500g beef mince
- 1 corn cob, kernels cut from cob
- 1 carrot, finely diced
- 100g shiitake mushrooms, finely diced
- 2 tbsp tamari
- 2 tbsp coconut sugar or rapadura
- 1 tsp tapioca starch
- 1 lettuce, broken into lettuce cups
- ½ bunch fresh coriander leaves, chopped
- 1 red chilli, fi nely chopped, optional
- ½ cup roasted peanuts
- 1 lime, cut into eighths
Method
- Place the oil into a wok or large skillet over a moderately high heat.
- Add the onion and sauté for 1 min.
- Add the garlic, ginger and mince and cook, stirring well until the beef is cooked, about 5 mins.
- Add the corn, carrots and mushrooms and stir-fry for 2 more mins.
- Mix the sauce ingredients together. Turn the heat up to high and add the sauce to the mince and vegetables, stirring well.
- Prepare the lettuce, coriander, chilli, peanuts and lime and serve buffet style alongside the cooked mince mixture.
- Assemble to your liking and enjoy.
