This chicken is marinated in a beautiful medley of prunes, herbs, olives and capers which results in the most incredibly tender and juicy chicken. If you prepare the marinade the day before, it makes the easiest mid-week dinner.

Ingredients

  • 6 cloves garlic, minced
  • 1 tbsp dried oregano
  • ¼ cup extra-virgin olive oil
  • ¼ cup red-wine vinegar
  • ¾ cup pitted prunes
  • 1⁄3 cup green olives
  • 1⁄3 cup baby capers
  • 3 bay leaves
  • Salt & pepper
  • 8 bone-in chicken thighs or chicken marylands
  • ½ cup dry white wine
  • ½ cup light-brown sugar
  • Parsley, to serve

Method


  • Add the garlic, oregano, olive oil, vinegar, prunes, olives, capers, bay leaves, salt and pepper to a large bowl then add the chicken and toss gently to coat. Marinate in the fridge overnight.
  • Preheat oven to 200°C.
  • Place the chicken on a large baking tray or two small baking trays.
  • Spoon the marinade over the chicken.
  • Whisk together the brown sugar and wine and pour over the chicken.
  • Bake in the oven for 45 mins, basting occasionally (at least twice) with the pan juices until the chicken is cooked through and golden brown on top.
  • Transfer the chicken to a serving platter.
  • Pour over some of the marinade and sprinkle with parsley.
  • Serve the remaining sauce in a small jug.
