Ginger-Glazed Salmon with Pineapple Salsa
This delicious salmon bowl is packed with omega-3 goodness. Salmon is rich in beneficial fats that support brain health, lower cholesterol and inflammation, and protect the heart. Ingredients
- 2 tbsp tamari
- 2 tbsp raw honey or pure maple syrup
- 1 tbsp fresh grated ginger
- ¼ tsp chilli flakes
- 4 cloves garlic, minced
- 2 × 170g salmon fillets, cut into chunks
- Handful basil leaves, to garnish
- 1 tsp toasted sesame seeds, to garnish
- Brown rice, to serve
- Salsa
- 2 cups diced fresh pineapple
- ½ small red onion, finely diced
- 1 small red capsicum, diced
- Handful coriander, chopped
- Handful mint, chopped
- Juice 1 lime
- Pinch sea salt
Method
- Whisk together the tamari, honey, ginger and chilli flakes in a small bowl.
- Heat some olive oil in a pan over medium heat, then add the salmon and cook until it reaches your preferred doneness.
- Add the garlic and cook for another min. Pour in the tamari mixture and toss the salmon so it becomes well coated. Remove the salmon and set it aside.
- Add a tbsp of water into the pan, give it a stir and let the sauce simmer until it thickens.
- Place pineapple, onion, capsicum, coriander and mint in a medium bowl. Toss through lime juice and sea salt.
- To serve, spoon some rice into two bowls, top with salmon pieces, drizzle over the pan sauce and top with salsa. Garnish with some sesame seeds and basil leaves.
