Recipe
Ingredients
- 15 sardines, gutted, head & backbone removed
- 1 cup chopped parsley
- 1 cup macadamias
- 2 spring onions
- Black pepper
- 2–3 large potatoes
- Lemon, cut into slices
Method
- Preheat oven to 200°C.
- Wash potatoes and leave skin on. Using a crinkle blade on a mandolin, slice the larger side of the potato into 1cm-thick ovals.
- Place onto a lined baking tray and cook for 15 mins or until they start to turn golden.
- Place parsley, macadamias and onions into blender and blitz until a rough crumb develops.
- Remove the chips from the oven and place the fillets of sardine, skin side down and open onto the chips. Spread the crumbs evenly between each fillet.
- Return to the oven and bake for an additional 10 mins until the crumb is golden and the sardines are cooked.
- Serve hot with slices of lemon.
