Super Green Mexican Rice

Super green Mexican rice packed with nutrients, perfect with grilled meats, tacos, burritos or as a base for burrito bowls.

Ingredients

  • 2 cups brown basmati rice
  • 3¼ cups vegetable stock
  • ½ cup fresh coriander
  • ½ cup fresh parsley
  • 1 ½ packed cups baby spinach
  • ½ tsp chilli flakes, optional
  • ½ red onion, finely chopped
  • 3 cloves garlic, minced
  • Sea salt, to taste
  • Juice 1 large lime

Method


  • In a large saucepan, bring 3 cups of stock to the boil, add the rice, and then reduce to a simmer for 15 mins covered until cooked. Remove from the heat and let it sit covered for another 15 mins. Then fluff with a fork.
  • Place remaining ¼ cup of stock, coriander, parsley, spinach, chilli, onion, garlic, sea salt and lime in a food processor and blend until well combined.
  • Toss the coriander mixture through the cooked warm rice and then serve.
  • Tip: Add some broccoli fl orets for extra green goodness.
