Super Green Mexican Rice
Super green Mexican rice packed with nutrients, perfect with grilled meats, tacos, burritos or as a base for burrito bowls.

Ingredients
- 2 cups brown basmati rice
- 3¼ cups vegetable stock
- ½ cup fresh coriander
- ½ cup fresh parsley
- 1 ½ packed cups baby spinach
- ½ tsp chilli flakes, optional
- ½ red onion, finely chopped
- 3 cloves garlic, minced
- Sea salt, to taste
- Juice 1 large lime
Method
- In a large saucepan, bring 3 cups of stock to the boil, add the rice, and then reduce to a simmer for 15 mins covered until cooked. Remove from the heat and let it sit covered for another 15 mins. Then fluff with a fork.
- Place remaining ¼ cup of stock, coriander, parsley, spinach, chilli, onion, garlic, sea salt and lime in a food processor and blend until well combined.
- Toss the coriander mixture through the cooked warm rice and then serve.
- Tip: Add some broccoli fl orets for extra green goodness.
