Simple Cleansing Green Breakfast Broth
This is a good foundational start to the day through all of autumn and winter but works any time of year. If you’re in the process of cleansing or fasting, or if you just need a simple kick start, this is a perfect way to help support your digestive system with simple nourishment.

Ingredients
- 1 tbsp olive oil
- 1 thumb-sized piece ginger, finely grated
- ½ thumb-sized piece fresh turmeric, finely grated
- 2 garlic cloves, finely grated
- 2 spring onions, white parts thinly sliced & green parts sliced separately, to serve
- 1L stock (vegetable or chicken)
- 2 handfuls green leaves (silver beet, kale, spinach, rocket or lettuce), shredded, torn or chopped
- ½ lemon, finely zested and juiced
- Sea salt & freshly ground black pepper, to taste
Method
- Heat oil in a small saucepan over low heat.
- Add ginger, turmeric, garlic and white parts of spring onions and stir for 2 mins until softened.
- Add stock, increase heat to medium-high and bring to the boil.
- Allow the broth to bubble for 2–3 mins.
- Add a sprinkling of any hardier greens (such as kale or silver beet) and simmer for another 2–3 mins until wilted.
- Remove from heat.
- Stir through any lighter greens (such as spinach or lettuce) and the green parts of the spring onions. Add lemon zest and juice (throw in the squeezed lemon, too).
- Season to taste with salt and freshly ground pepper and serve immediately.
