Chocolate, Oat & Coconut Bars
These healthy snack bars are easy to make, keep you satisfied until dinner
time, and are perfect for kids after school or on the go. For a nut-free
option, swap the almonds for pepitas or sunflower seeds.

Ingredients
- 3 cups organic gluten-free oats
- 3⁄4 cup slivered almonds
- 3⁄4 cup organic shredded coconut
- 1⁄2 cup gluten-free self-raising flour
- 1 cup gluten-free plain flour
- 10 Medjool dates, pitted & chopped
- 1 1⁄4 cup 70% dark chocolate, chopped
- 1⁄2 cup honey, warmed to a runny consistency
- 125g melted butter
- 3 large eggs, lightly beaten
Method
- Preheat oven to 170°C.
- Reserve 1⁄4 cup of the chopped chocolate, then mix the dry ingredients together.
- Add honey, butter and eggs. Combine well.
- Press firmly into a lined lamington tin.
- Bake for 30 mins, remove and cool.
- Melt the remaining chocolate and drizzle over the top.
- Slice into bars and store in an airtight container for up to 4 days.
