Ingredients
- 1 2⁄3 cups brown rice (soaked 4–8 hours in filtered water if possible, then drained & rinsed)
- 2 tbsp sushi vinegar or rice-wine vinegar
- 1 tbsp peanut oil
- 1 tsp sesame oil
- 2 cups fresh shiitake or oyster mushrooms
- 4 tbsp unpasteurised white miso paste
- ½ daikon, spiralised or grated
- 1 small Lebanese cucumber, shaved into ribbons
- 2 colourful radishes, thinly sliced on a mandolin
- 50g dried wakame, soaked in boiling water 3–5 mins, then drained
- 1 tbsp kimchi
- 2 spring onions, cut into matchsticks
- 1 handful coriander leaves
- 1 tsp dried dulse flakes
- 1 sheet nori, coarsely torn
- 1 handful snow pea shoots
- 1 tbsp toasted white sesame seeds
- 1 tbsp toasted black sesame seeds
- Dressing
- 2 tbsp olive oil
- 1 tsp sesame oil
- 1 tbsp tamari
- ½ garlic clove, minced
- ½ tsp minced ginger
Method
- Cook the rice in plenty of salted boiling water for 25–35 mins if soaked or more if unsoaked. You want to retain some texture but do not undercook it. Drain well, then stir the vinegar through. Set aside to cool.
- Get a chargrill pan smoking hot. Mix the peanut and sesame oils, brush the mushrooms with the oils, then grill on both sides about 1–2 mins each side so they char nicely but maintain their raw quality through the middle. Slice them into thick bite-sized pieces.
- For the dressing, whisk the ingredients well and leave to infuse until needed.
- Divide the rice among 4 bowls, then add the daikon, cucumber and radish. Nestle the wakame, kimchi and mushrooms around, then spoon the dressing over the top. Garnish with spring onion, coriander, dulse, nori, snow pea shoots and sesame seeds plus add a little dish of the miso or spread liberally around one edge of the bowl.
