Cottage Cheese Pancakes

These fluffy, protein-packed cottage cheese pancakes make a nourishing breakfast or healthy snack. Cottage cheese is rich in high-quality protein and calcium, supporting muscle maintenance, bone health and satiety. Oat flour adds slow-releasing carbohydrates and soluble fibre, which help balance blood sugar, support digestion, and keep you feeling energised for longer.

Ingredients

  • 2 large organic eggs
  • 1–2 tbsp raw honey or pure maple syrup
  • 1 tsp vanilla extract
  • 200g cottage cheese
  • ½ cup oat flour or almond flour
  • ½ tsp baking powder
  • Fresh fruit, yoghurt, honey & hemp seeds, to serve

Method


  • Preheat the oven to 175°C and lightly grease a cupcake tin.
  • In a bowl, beat the eggs, honey and vanilla until combined. Stir in the cottage cheese, then fold in the oat flour and baking powder until just combined.
  • Spoon the batter into the prepared tin and bake for 18–22 mins or until golden and fluffy.
  • Let the pancakes cool slightly before removing from the tin.
  • Serve with fresh fruit and berries, yoghurt, a drizzle of honey, and a sprinkle of hemp seeds.
