Ingredients

Method

  • ¼ tsp fresh ginger, grated
  • 2 tbsp lime juice
  • Red chilli, sliced, to taste
  • ½ tsp Niulife Coconut Sugar
  • ½ tsp Niulife Vegan Fysh Sauce
  • 1 tsp spring onion
  • 200g mango cheeks, sliced
  • Pearls 1 finger lime
  • 1 tbsp coconut cream
  1. In a small bowl combine ginger, lime juice, chilli, Niulife Coconut Sugar, Niulife Fysh Sauce and spring onion.
  2. Arrange the mango slices on a plate. Spoon on dressing, finger lime pearls and coconut cream.

Ingredients

Method

  • ¼ red cabbage, thinly sliced
  • 2-3 spring onions, sliced
  • Juice 1 lime
  • 1 generous pinch salt
  • 1 tsp sesame or olive oil
  • ¼ cup tapioca flour
  • ⅓ cup filtered water
  • 1 tbsp sesame seeds + 1 tsp extra for serving
  • 1 tbsp coconut oil
  • 2 cups of cauliflower, chopped into bite-size pieces
  • 4 tbsp Niulife Sweet Chilli Coconut Amino Sauce
  • 1 tsp Niulife Vegan Fish Sauce
  • 2 tbsp coconut yoghurt
  • ¼ tsp lime rind + ¼ lime, juiced
  • 1 pinch cumin
  • 1 pinch chilli powder
  • 1 pinch coriander
  • ½ garlic clove, minced
  • 6 soft shell corn tacos
  • ½ avocado
  1. To make the slaw, combine cabbage, spring onion, lime juice, salt and oil in a medium bowl. Allow to rest for 30 mins so that the cabbage becomes softer.
  2. For the cauliflower, add tapioca flour, water and 1 tbsp sesame seeds in a bowl and whisk into a batter.
  3. Add coconut oil to a frying pan over medium heat.
  4. Dip cauliflower into the batter and add to the frying pan, cook until golden brown.
  5. Add Sweet Chili Sauce, Fysh Sauce, and 1 tsp sesame seeds into pan and mix until cauliflower is coated.
  6. To make the taco sauce, in a small bowl combine coconut yoghurt, lime juice, lime rind, cumin, chilli, coriander and garlic.
  7. Heat tacos in a medium frying pan over medium heat, about 30 secs each side.
  8. To serve, place taco on a plate, top with slaw, avocado, cauliflower and a drizzle of our taco sauce.

  • Tofu Marinade
  • ½ tsp minced garlic
  • 1 tsp honey
  • ¼ cup soy sauce or Niulife Original Coconut Amino Sauce
  • 300g tofu
  • Thai Dressing
  • ½ cup tahini
  • 1 tbsp Niulife Vegan Fysh Sauce
  • 1 clove garlic, minced
  • 2cm ginger, minced
  • 1 tbsp lime juice
  • 1 tbsp soy sauce or Niulife Original Coconut Amino Sauce
  • Salad
  • 1 carrot + 1 zucchini, both julienned into noodles & lightly steamed 60 seconds
  • ½ head broccoli, sliced into small pieces & lightly steamed 60 seconds
  • ½ bunch coriander, chopped
  • 1 red capsicum, thinly sliced
  • ½ cup cashews, roasted for 5–8 mins
  • Baby corn, steamed for 2 mins
  • Lime wedge + sesame seeds, to serve
  1. Marinade tofu overnight or for at least 2 hrs to absorb flavour.
  2. In a hot pan, sauté the tofu until golden brown on all sides, keeping the excess marinade.
  3. Once tofu is cooked, add in the excess marinade and allow to thicken. Stir the tofu around until coated and sticky.
  4. Place all dressing ingredients in a large cup and stir until all combined.
  5. On a large serving plate, start combining all the prepared vegetables, herbs, roasted cashews and warm tofu, tossing well. Then drizzle the Thai dressing over the salad mixture.
  6. Serve with a lime wedge and sesame seeds.
