Dill Roasted Cabbage

Cabbage is so versatile when it comes to flavouring. In this recipe, you could use sumac or garam masala instead of paprika.

Ingredients

  • 4cm piece ginger, sliced
  • 6 sprigs dill
  • 1 red cabbage, halved
  • 1 white cabbage, halved
  • Garlic-infused olive oil
  • Salt & pepper
  • 1 tsp paprika
  • 3 cups peas
  • 2 tbsp mint sauce

Method


  • Preheat oven to 190°.
  • Spread ginger and half of the dill on the bottom of a tray.
  • Brush cabbage with garlic-infused olive oil, season with salt and pepper and place on the tray.
  • Scatter over remaining dill.
  • Roast for 25 to 30 mins.
  • Meanwhile, place the peas and a good pinch salt in a pot of boiling water and boil until just tender, about 8 min. Drain well then toss in mint sauce.
  • Divide peas and cabbage between plates.
  • Tip: Don’t overcook the cabbage; you don’t want a soggy, collapsed mess on your plate.
