Haloumi and Herb Salad Recipe
Feel free to use any combination of fresh herbs in this dish. I used the basil, mint and oregano I had growing in my garden.
Serves: 3 as entree
- 2 tbsp olive oil
- 225g haloumi cheese, sliced
- 2 cups fresh herbs of choice
- Juice 1 lemon
- Heat 1 tbsp olive oil in frypan over medium heat. Add haloumi slices and cook on each side for 3 mins until golden brown.
- Place haloumi pieces on serving platter and scatter over mixed fresh herbs. Drizzle with 1 tbsp olive oil and lemon juice and serve.
