Roast Cauliflower Chicken Bake Recipe
I like to top this Roast Cauliflower Chicken Bake with Tahini Cumin Dressing.
- 2 chicken breasts, whole
- 1 cauliflower, cut into florets
- 1 lemon, cut into wedges
- 1 onion, sliced
- 3 tbsp olive oil
- 1 tsp sea salt
- 1 tsp ground cumin
- 2 tbsp almonds
- 2 tbsp sultanas
- Preheat oven to 180°C. Line tray with baking paper.
- Place chicken breasts on tray whole and surround them with cauliflower pieces, lemon and onion. Drizzle with olive oil, sprinkle over salt, cumin and almonds. Bake in oven for 25–30 mins until chicken is cooked.
- Remove from oven, sprinkle over sultanas and drizzle over Tahini Dressing. See above.
