Banana Blossom, Pesto & Cherry Tomato Pizza

A meat-free, light and flavoursome pizza that hits all the taste buds. Adding this superfood as a pizza topping is a great way to explore new flavour combinations.

Ingredients

  • 2 x ready-made pizza bases
  • 200g Basil, Spinach & Cashew Pesto Dip
  • 1 cup pizza cheese
  • 1 tin banana blossoms, drain liquid & pat dry on paper towel
  • 10 cherry tomatoes, quartered
  • Rocket leaves, to serve
  • Balsamic glaze, to serve

Method


  • Preheat oven to 200°C.
  • Place pizza bases on baking paper, spread a thin layer of dip over the bases and a thin layer of pizza cheese.
  • Peel away the banana blossom outer layers and use the inner layers and heart part of the banana blossoms.
  • Layer blossoms and tomatoes.
  • Bake the pizzas for 15 mins. Cook for a further 5 mins if needed or until the base is crispy and golden around the edges and toppings are golden and cooked.
  • Top with rocket and drizzle balsamic glaze
  • Tip: Try a barbecue sauce base for those who love a barbecue chicken-style pizza.
