Blackberry and Apple Crumble Muffins Recipe

Ingredients

  • 1½ cups oat flour
  • 1 cup almond meal
  • 1 tsp baking powder
  • ½ tsp bicarbonate of soda
  • ½ tsp ground cinnamon
  • ⅓ cup coconut oil, melted
  • ⅓ cup raw honey
  • 2 organic eggs
  • 1 tsp vanilla bean extract or paste
  • ¾ cup diced & peeled apples
  • ¾ cup sliced blackberries

  • Topping
  • ⅓ cup almond meal
  • 2 tbsp coconut sugar
  • 2 tbsp flaked almonds
  • 2 tbsp whole oats
  • 3 tbsp coconut oil, softened
  • ½ tsp ground cinnamon
  • 1 tbsp raw honey

Method


  • Preheat oven to 180°C and grease 12-cup muffin pan or line with paper cases.
  • In medium-sized bowl mix oat flour, almond meal, baking powder, bicarb and cinnamon.
  • In another bowl whisk together coconut oil, honey, eggs, and vanilla.
  • Pour wet ingredients into dry and combine.
  • Gently mix through apple and blackberries. Spoon mixture into muffin tray.
  • Combine topping ingredients in small bowl. Add extra honey if mixture is too dry.
  • Top muffin mixture with topping and bake for 30 mins, until a skewer comes out cleanly.
