These healthy snack bars are easy to make, keep you satisfied until dinner
time, and are perfect for kids after school or on the go. For a nut-free
option, swap the almonds for pepitas or sunflower seeds.

Ingredients

  • 3 cups organic gluten-free oats
  • 3⁄4 cup slivered almonds
  • 3⁄4 cup organic shredded coconut
  • 1⁄2 cup gluten-free self-raising flour
  • 1 cup gluten-free plain flour
  • 10 Medjool dates, pitted & chopped
  • 1 1⁄4 cup 70% dark chocolate, chopped
  • 1⁄2 cup honey, warmed to a runny consistency
  • 125g melted butter
  • 3 large eggs, lightly beaten

Method


  • Preheat oven to 170°C.
  • Reserve 1⁄4 cup of the chopped chocolate, then mix the dry ingredients together.
  • Add honey, butter and eggs. Combine well.
  • Press firmly into a lined lamington tin.
  • Bake for 30 mins, remove and cool.
  • Melt the remaining chocolate and drizzle over the top.
  • Slice into bars and store in an airtight container for up to 4 days.
