Chocolate & Raspberry Chia Puddings

This is the ultimate cheat’s dessert recipe — so easy yet so delicious. Make sure you let the chia seeds set properly for at least four hours in the fridge, ideally overnight prior to serving.

Ingredients

  • 2 cups almond milk
  • ½ cup chia seeds
  • 4 tbsp cacao powder
  • 4 tbsp maple syrup
  • 1 tsp vanilla essence
  • 4 tbsp raspberry jam
  • Raspberries, nuts & seeds, to garnish (optional)

Method


  • Combine the milk, chia seeds, cacao powder and vanilla extract in a medium-sized bowl and whisk until combined.
  • Let the mixture stand for 20 mins then whisk again before dividing the pudding into four dessert glasses. Place in the fridge to set for four hours, preferably overnight.
  • When the chia puddings are set, place a layer of jam on top of the set chia seeds then top with fresh raspberries and crushed nuts and seeds if desired.
