Loaded Spinach Tortilla with Spicy Turkey Balls & Fresh Salsa

Fresh, Mexican-inspired spinach tortillas loaded with spicy turkey balls and vibrant salsa for a wholesome, flavour-packed meal.

Ingredients

  • 3 ¼ cups plain fl our
  • 90g spinach
  • Pinch salt
  • 80g butter
  • 1 cup cold water
  • 500g turkey mince
  • 2 cloves garlic, crushed
  • 1 red chilli, seeded & diced
  • 1 tbsp chopped coriander
  • Salt & pepper
  • 1 tbsp olive oil
  • 2 corn cobs, char-grilled
  • 1 Cos lettuce, sliced
  • 2 avocados, seeded & sliced
  • 1 large carrot, spiralled
  • 1 red chilli, seeded & sliced
  • Salsa:
  • 2 vine-ripened tomatoes, seeded & diced
  • ½ red onion, diced
  • 1 tbsp chopped coriander
  • 1 tbsp olive oil

Method


  • Add fl our, spinach and salt to a food processor. Blitz until the mixture becomes a fine texture.
  • Place in a bowl and rub the butter into the mixture to form a grainy texture.
  • Add the water a small amount at a time until the mixture forms a dough.
  • Place onto a clean surface with a little extra flour. Knead until smooth.
  • Cut into 10 equal pieces and roll into balls. Cover and rest for 2 hrs
  • Add the turkey mince to a bowl along with the garlic, chilli, coriander, salt and pepper. Combine well then roll mince into balls, approx. the size of a walnut.
  • Heat olive oil in a non-stick pan to medium heat.
  • Cook turkey balls in batches. Don’t overcrowd the pan to allow the balls to brown easily. Keep warm whilst you cook the rest of the mixture.
  • In a bowl, mix salsa ingredients and season with salt and pepper. Set aside.
  • Slice the corn kernels off the cob and set aside.
  • To cook the tortillas, roll each dough ball out to the size of a small dinner plate.
  • Heat a non-stick pan to medium high. Place the tortilla into the pan and cook for 1½ mins. Once it starts to bubble up, fl ip and cook the other side for a further 30 secs.
  • Remove and keep warm under a tea towel. Repeat.
  • Place all ingredients onto a large serving platter, load up your tortilla with the fresh ingredients and turkey balls. Top with the fresh salsa.
