Macadamia Crusted Sardines

This different take on “fish & chips” is ideal for your next dinner party. Sardines are rich in omega-3 fatty acids, vitamins and minerals and low in heavy metals, making them one of the best fish options to eat.

Ingredients

  • 15 sardines, gutted, head & backbone removed
  • 1 cup chopped parsley
  • 1 cup macadamias
  • 2 spring onions
  • Black pepper
  • 2–3 large potatoes
  • Lemon, cut into slices

Method


  • Preheat oven to 200°C.
  • Wash potatoes and leave skin on. Using a crinkle blade on a mandolin, slice the larger side of the potato into 1cm-thick ovals.
  • Place onto a lined baking tray and cook for 15 mins or until they start to turn golden.
  • Place parsley, macadamias and onions into blender and blitz until a rough crumb develops.
  • Remove the chips from the oven and place the fillets of sardine, skin side down and open onto the chips. Spread the crumbs evenly between each fillet.
  • Return to the oven and bake for an additional 10 mins until the crumb is golden and the sardines are cooked.
  • Serve hot with slices of lemon.
