Mediterranean Chicken Traybake
This recipe is the perfect one-dish traybake with no fuss or mess! The chicken and potatoes soak up the lemon, garlic and white wine sauce beautifully.

Ingredients
- 500g kipfler potatoes, halved
- Red onion, cut into wedges
- 6 cloves garlic
- 6 chicken thighs
- 2 tbsp extra-virgin olive oil
- Salt & pepper to season
- 1 lemon, sliced
- 1 cup cherry tomatoes, halved
- 1⁄3 cup Kalamata olives
- ½ cup dry white wine
- 100g feta
- Rosemary or oregano, to garnish
Method
- Preheat oven to 180°C.
- Place the potatoes, red onion and garlic in a large casserole dish. Top with chicken. Drizzle with olive oil and season with salt and pepper.
- Bake for 20 mins then remove from the oven.
- Add the lemon, tomatoes and olives and drizzle with white wine.
- Bake for another 30 mins until the chicken is cooked through and potatoes are tender.
- Remove from the oven, sprinkle with feta and garnish with rosemary or oregano.
