Mediterranean Chicken Traybake

This recipe is the perfect one-dish traybake with no fuss or mess! The chicken and potatoes soak up the lemon, garlic and white wine sauce beautifully.

Ingredients

  • 500g kipfler potatoes, halved
  • Red onion, cut into wedges
  • 6 cloves garlic
  • 6 chicken thighs
  • 2 tbsp extra-virgin olive oil
  • Salt & pepper to season
  • 1 lemon, sliced
  • 1 cup cherry tomatoes, halved
  • 1⁄3 cup Kalamata olives
  • ½ cup dry white wine
  • 100g feta
  • Rosemary or oregano, to garnish

Method


  • Preheat oven to 180°C.
  • Place the potatoes, red onion and garlic in a large casserole dish. Top with chicken. Drizzle with olive oil and season with salt and pepper.
  • Bake for 20 mins then remove from the oven.
  • Add the lemon, tomatoes and olives and drizzle with white wine.
  • Bake for another 30 mins until the chicken is cooked through and potatoes are tender.
  • Remove from the oven, sprinkle with feta and garnish with rosemary or oregano.
