Pan-Fried Fennel, Potatoes & Pine Nuts

I can’t ever get enough potatoes in my life. I’m addicted and the fennel and pine nuts in this recipe take them to another level.

Ingredients

  • 500g potatoes, peeled & cut into roughly 5cm x 3cm pieces
  • 3 tbsp olive oil
  • Salt & pepper
  • 5 cloves garlic, roughly chopped
  • 2 fennel bulbs, outside layer removed & sliced
  • 5 cloves garlic, roughly chopped
  • ½ cup pine nuts

Method


  • Heat a large frying pan over medium-low heat. Add olive oil, potatoes, salt and pepper and sauté for 10 mins.
  • Add fennel and garlic and sauté for a further 10 mins.
  • Meanwhile, place pine nuts in a small frying pan and toast until they darken.
  • Pile everything up on a platter and garnish with fennel fronds.
