High-Protein Caramelised Banana Porridge

This warm, comforting breakfast is packed with protein, creamy oats and sweet caramelised bananas and topped with crunchy chocolate granola.

Ingredients

  • Chocolate Granola
  • 6 tbsp rolled oats
  • 2 tbsp almonds or walnuts, chopped
  • 2 tsp coconut oil
  • 1 tbsp nut butter
  • 1 tbsp maple syrup
  • 2 tsp cacao powder
  • Pinch sea salt
  • Porridge
  • 1 cup old-fashioned rolled oats
  • 2 cups unsweetened almond milk
  • 2 tbsp chia seeds
  • 1 tsp cinnamon
  • Pinch salt
  • 2 scoops vanilla protein powder
  • 4 tbsp Greek yoghurt
  • Caramelised Banana
  • 2 small bananas, sliced lengthways
  • 2 tsp unrefined coconut oil
  • 1–2 tbsp maple syrup

Method


  • To make the chocolate granola, add the oats and chopped nuts to a small pan and toast for a few minutes until lightly golden. Stir in the coconut oil, nut butter, maple syrup, cacao powder and salt. Cook for another 1–2 mins until crispy, then set aside to cool.
  • Combine the oats, almond milk, chia seeds, cinnamon and salt in a large saucepan over medium heat. Cook for 4–5 mins, stirring frequently, until thick and creamy. Remove from the heat and stir through the protein powder and Greek yoghurt.
  • To make the caramelised banana, heat the coconut oil and maple syrup in a pan over medium heat. Add the bananas cut-side down and cook for about 2 mins on each side until caramelised.
  • Divide the porridge between bowls and top with the caramelised banana and chocolate granola.
