Healthy French Toast

This healthy French toast is a wholesome breakfast treat, made with coconut milk for a creamy, dairy-free twist. Coconut milk and oil are rich in healthy medium-chain fatty acids, which provide a quick and easily absorbed energy source for the brain and body. Organic eggs provide high-quality protein along with essential nutrients like choline, which is vital for brain health, memory, and the production of neurotransmitters. They also contain vitamin A, supporting eye health and immune function, and vitamin D, which assists with calcium absorption for strong bones.

Ingredients

  • 2 organic eggs
  • ½ cup coconut milk
  • ¼ tsp ground cinnamon
  • ½ tsp vanilla extract
  • 4 large thick slices sourdough bread
  • Coconut oil for frying
  • Coconut yoghurt, fresh berries, pure maple syrup or raw honey, coconut flakes, sliced almonds or drizzle of nut butter

Method


  • Whisk eggs, milk, coconut, cinnamon and vanilla together in a bowl.
  • Add bread slices and soak for 1-2 mins until soaked in.
  • Add coconut oil to a frying pan and add soaked bread slices. Cook for 2 mins each side until golden brown.
  • Serve topped with coconut yoghurt, berries and a drizzle of maple syrup. If you wish, you can also top with coconut flakes, almonds and nut butter.
