Spiced Salmon Mango Salsa
The combination of sweet mango with fresh mint and lime zest over a lightly spiced salmon fillet is just incredible. Get your pan nice and hot and be ready to enjoy the tender, caramelised flakes of salmon with a cracking salsa.

Ingredients
- 4 salmon fillets
- 1 tsp extra-virgin olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1 tbsp coconut sugar or rapadura sugar
- Mango Salsa
- 1 mango, flesh diced
- ½ small red onion, very finely diced
- 1 bunch fresh mint leaves or coriander leaves
- Juice 1 lime
- 1 tsp honey or more to taste
- Sea salt, to taste
Method
- Pat the salmon fillets dry with a paper towel. Drizzle over the olive oil and massage it gently.
- In a small bowl, thoroughly combine the garlic powder, smoked paprika and sugar. Rub on all sides of the salmon.
- Heat a pan or barbecue hot plate to a good hot heat — you want to cook this salmon high and fast.
- Once hot, place the salmon skin side down in the pan or on the barbecue plate. Keep an eye on the edge of the skin. Turn when the skin is crispy and a deep golden brown colour it should free itself from the pan.
- Cook for a few more mins until cooked through. If it is a thick fillet, you might like to sear all sides so that it is caramelised all over.
- Once cooked, set aside to rest, skin side up (to keep it crispy) while you make the salsa.
- Combine the mango, red onion and mint in a bowl.
- In another bowl, mix the lime juice, honey and sea salt (this can take a bit of stirring if the honey is quite thick). Toss this lime dressing through the mango mixture.
- Place each salmon fillet on the serving plates and top with salsa.
