Chickpea & Tuna Brain Power Salad

This vibrant salad is packed with brain-boosting superfoods, protein and healthy fats, making it a nourishing lunch that fuels both body and mind. Toasting the pumpkin seeds brings out their nutty flavour and adds a satisfying textural crunch.

Ingredients

  • 1 small red onion, thinly sliced
  • 400g tin chickpeas, drained & rinsed
  • 1 cup cherry tomatoes, halved
  • 1 Lebanese cucumber, diced
  • 1⁄3 cup kalamata olives, pitted
  • 2 cups mixed salad greens
  • ¼ cup parsley, roughly chopped
  • 185g tin tuna, drained
  • 2 tbsp pumpkin seeds, toasted
  • Dressing
  • Juice 1 lemon
  • 3 tbsp extra-virgin olive oil
  • 1 tsp Dijon mustard
  • 2 cloves garlic, minced
  • Salt & pepper, to taste

Method


  • In a large bowl, combine the onion, chickpeas, cherry tomatoes, cucumber, olives, greens and parsley. Toss gently to mix.
  • Arrange the tuna on top and sprinkle over the toasted pumpkin seeds.
  • In a small bowl, whisk together the dressing ingredients until well combined.
  • Drizzle the dressing over the salad just before serving.
