Super Green Goodness Salad
This salad is packed with beneficial brassicas. Kale and cabbage are rich in glucosinolates, sulphur-based compounds with antioxidant and detoxifying properties that support liver function. Avocado is rich in heart-healthy monounsaturated fats, potassium and vitamin E, which support cardiovascular health and promote radiant, glowing skin.

Ingredients
- 2 cups shredded baby kale, remove stems
- 2 cups shredded cabbage or Brussels sprouts
- 1 large avocado, sliced
- 1 medium cucumber, diced
- ¼ cup pumpkin or sunflower seeds
- 2 tbsp hemp seeds
- ¼ cup pistachios or walnuts (optional)
- ¾ cup cooked shelled edamame
- Green Dressing
- ¾ cup Greek yoghurt
- 1 tbsp cold-pressed olive oil
- ½ cup fresh basil, finely chopped
- ½ cup fresh parsley, finely chopped
- Juice 1 lemon
- 1 tsp raw honey or pure maple syrup
- ½ tsp garlic powder
- 1 tsp Dijon mustard
- ½ tsp sea salt
Method
- Place all dressing ingredients in a food processor and pulse until well combined.
- In a large bowl, combine all salad ingredients and gently toss.
- Add dressing and gently toss through. Top with extra nuts and seeds to serve.
