Green Lentil Salad with Spiced Honey Almonds

Ingredients

  • ½ bunch purple kale, stems removed then chopped
  • 2 big handfuls mixed greens (rocket, baby spinach, Swiss chard, beet greens)
  • Sea salt, to taste
  • 1 cup French green lentils, rinsed & debris removed
  • ½ cup raw whole almonds
  • ½ tsp chilli flakes
  • 2 tsp raw honey or pure maple syrup
  • 2 shallots, thinly sliced
  • ½ English cucumber, diced
  • ½ cup chopped parsley
  • 100g feta or goat’s cheese, crumbled
  • Dressing
  • 1 lemon, zested & juiced
  • 2 tbsp extra-virgin olive oil
  • 1 tsp wholegrain or Dijon mustard
  • Pinch sea salt, to taste
  • Spiced Honey Almonds
  • ½ cup raw whole almonds
  • ½ tsp chilli flakes
  • 2 tsp raw honey or pure maple syrup

Method


  • Add the kale to a large bowl with a pinch of sea salt. Massage gently until slightly softened, about 30 secs. Add mixed greens and toss to combine.
  • Bring a large pot of salted water to the boil. Add lentils and simmer uncovered for 20–25 mins, until tender but still slightly firm. Drain well and allow to cool slightly.
  • Heat a frying pan over medium heat with a splash of olive oil. Add almonds and chilli flakes. Toast, stirring often, until golden.
  • Reduce heat to low and drizzle in honey. Stir continuously for 30 secs until almonds are lightly glazed and sticky. Immediately transfer to baking paper and spread out to cool.
  • In a small bowl, whisk together all dressing ingredients.
  • Add lentils, shallots, cucumber, parsley and half the almonds to the greens.
  • Pour over the dressing and toss gently to combine.
  • Transfer to a serving dish and top with crumbled feta and remaining spiced honey almonds.
