Ingredients
- 1 large cauliflower, cut into florets
- 50g unsalted butter
- 2 tbsp gluten-free flour
- 500mL milk
- ¼ tsp nutmeg
- Salt & pepper, to season
- 1 cup cheddar or tasty cheese, grated
- 2–4 tbsp gluten-free breadcrumbs or toasted almonds
Method
- Preheat the oven to 200°C fan-forced.
- Boil the cauliflower for 5 mins in boiling water until just tender.
- Drain the cauliflower and place in a large baking dish.
- Heat the butter in a large saucepan over medium heat then add the flour, whisking constantly. Slowly add the milk, whisking frequently for a few mins until the mixture thickens. It should be thick enough to coat the back of a spoon.
- Season with nutmeg, salt and pepper.
- Take off the heat then add the cheese and stir until combined. Pour over the cauliflower and top with breadcrumbs.
- Bake in the oven for 15–20 mins until golden and bubbling.
