High-Protein Caramelised Banana Porridge
This warm, comforting breakfast is packed with protein, creamy oats and sweet caramelised bananas and topped with crunchy chocolate granola.

Ingredients
- Chocolate Granola
- 6 tbsp rolled oats
- 2 tbsp almonds or walnuts, chopped
- 2 tsp coconut oil
- 1 tbsp nut butter
- 1 tbsp maple syrup
- 2 tsp cacao powder
- Pinch sea salt
- Porridge
- 1 cup old-fashioned rolled oats
- 2 cups unsweetened almond milk
- 2 tbsp chia seeds
- 1 tsp cinnamon
- Pinch salt
- 2 scoops vanilla protein powder
- 4 tbsp Greek yoghurt
- Caramelised Banana
- 2 small bananas, sliced lengthways
- 2 tsp unrefined coconut oil
- 1–2 tbsp maple syrup
Method
- To make the chocolate granola, add the oats and chopped nuts to a small pan and toast for a few minutes until lightly golden. Stir in the coconut oil, nut butter, maple syrup, cacao powder and salt. Cook for another 1–2 mins until crispy, then set aside to cool.
- Combine the oats, almond milk, chia seeds, cinnamon and salt in a large saucepan over medium heat. Cook for 4–5 mins, stirring frequently, until thick and creamy. Remove from the heat and stir through the protein powder and Greek yoghurt.
- To make the caramelised banana, heat the coconut oil and maple syrup in a pan over medium heat. Add the bananas cut-side down and cook for about 2 mins on each side until caramelised.
- Divide the porridge between bowls and top with the caramelised banana and chocolate granola.
