Ingredients

  • 1 tbsp coconut oil
  • 3 medium red onions, finely sliced
  • 1 sprig fresh curry leaves
  • 2–3 tsp chilli flakes
  • 1 small cinnamon stick
  • 1 tsp grated lemongrass (tender base only)
  • 3 garlic cloves, finely chopped
  • 2cm fresh ginger, finely chopped
  • 1 tbsp apple-cider vinegar
  • 1 tbsp coconut sugar
  • Pinch sea salt
  • Juice ¼ lime

Method


  • Heat the oil in a frying pan over medium-low heat. Add the onions and sea salt and cook, stirring often, until they are soft and caramelised. Remove the onions and set aside.
  • Add the curry leaves, chilli flakes, cinnamon and lemongrass to the pan on low heat and cook until fragrant. Stir in the garlic and ginger and sauté gently until softened.
  • Return the caramelised onions to the pan then add the apple cider vinegar and coconut sugar.
  • Stir well and simmer on low heat until the liquid reduces and the sambol becomes sticky and rich.
  • Remove the cinnamon stick and finish with fresh lime juice.
