Cottage Cheese Pancakes
These fluffy, protein-packed cottage cheese pancakes make a nourishing breakfast or healthy snack. Cottage cheese is rich in high-quality protein and calcium, supporting muscle maintenance, bone health and satiety. Oat flour adds slow-releasing carbohydrates and soluble fibre, which help balance blood sugar, support digestion, and keep you feeling energised for longer.

Ingredients
- 2 large organic eggs
- 1–2 tbsp raw honey or pure maple syrup
- 1 tsp vanilla extract
- 200g cottage cheese
- ½ cup oat flour or almond flour
- ½ tsp baking powder
- Fresh fruit, yoghurt, honey & hemp seeds, to serve
Method
- Preheat the oven to 175°C and lightly grease a cupcake tin.
- In a bowl, beat the eggs, honey and vanilla until combined. Stir in the cottage cheese, then fold in the oat flour and baking powder until just combined.
- Spoon the batter into the prepared tin and bake for 18–22 mins or until golden and fluffy.
- Let the pancakes cool slightly before removing from the tin.
- Serve with fresh fruit and berries, yoghurt, a drizzle of honey, and a sprinkle of hemp seeds.
