Jackfruit contains beta-carotene, lutein and zeaxanthin, which are important eye nutrients that help improve vision and protect the eyes from free radicals. These antioxidants help protect the eyes from macular degeneration and reduce the risk of cataracts.

Jackfruit Salad Recipe

Ingredients

  • Tin jackfruit, shredded, or ½ fresh jackfruit, cooked & shredded
  • Large handful bean sprouts
  • Handful mint, roughly chopped
  • Handful coriander, roughly chopped
  • ½ red onion, thinly sliced
  • 1 chilli, sliced
  • ¼ cup roughly chopped roasted cashews
  • 1 lime, cut into wedges

  • Dressing
  • 2 tbsp tamari
  • 2 tsp honey
  • 4 tbsp lime juice
  • 1 clove garlic, minced
  • 1 tsp ginger, grated

Method


  • Combine dressing ingredients in jar and shake well.
  • Place jackfruit in bowl and cover with half of salad dressing and toss.
  • Add remaining ingredients and dressing and toss gently.
  • Serve topped with roasted cashews and wedge of lime.
