Ingredients
- 2 handfuls kale, stems removed & finely chopped
 - Juice & zest 1 lemon
 - 2 tbsp extra-virgin olive oil
 - Pinch sea salt
 - 2 oranges, peeled & diced
 - 1 medium avocado, diced
 - ½ pomegranate, seeds removed
 - Handful mint leaves, roughly chopped
 - 3 tbsp roughly chopped pistachios
 - 2 tbsp pepitas
 
Method
- Place kale in large bowl and cover with lemon juice, olive oil and sea salt. Massage kale for 3 mins until leaves are soft.
 - Gently toss through orange pieces, avocado, pomegranate seeds, mint, pistachios and pepitas.
